Awesome Meatloaf image

A family favorite already! Came from Jan 2012 Southern Living! Used the meatloaf as main entree DEFINITELY MAKING AGAIN Page 93 of the January magazine for the Entire Recipe "Edward's Open-Faced Meatloaf Sandwiches.

Number Of Ingredients 18

7 slice(s) bacon (thin) or 5 thick
2 cup(s) chopped or diced onions (1 large white)
1/2 cup(s) finely chopped or diced celery
2 clove(s) garlic, minced
2 cup(s) chopped fresh mushrooms
2 pound(s) ground chuck
1 1/2 cup(s) soft, fresh breadcrumbs
3 large eggs
1/4 cup(s) cola soft drink
2 tablespoon(s) bourbon (i did not use)
2 teaspoon(s) worcestershire sauce
1/2 cup(s) ketchup
1 1/2 teaspoon(s) salt
1/2 teaspoon(s) freshly ground pepper
TOPPING
2 tablespoon(s) light brown sugar (for topping)
1 tablespoon(s) soy sauce (for topping)
1/2 cup(s) ketchup

Steps:

  • Preheat Oven to 350 Cook bacon in large skillet over medium heat stirring often 8 - to minutes or until crisp. Remove bacon and drain on paper towels reserving drippings in skillet
  • Add onions, celery, garlic to hot drippings and saute 3 minutes
  • Add mushrooms saute 4 minutes.
  • Transfer mixture to large bowl and let cool to room temperature
  • Add ground chuck, breadcrumbs, eggs, cola, (bourbon), worchestershire, 1 1/2 tsp salt, 1/2 tsp pepper, 1/2 cup ketchup and cooked bacon to cooled onion mixture. Combine by hand.
  • Stir together brown sugar, 1/2 cup ketchup and soy sauce in separate bowl
  • At this point I made two small loafs and put on the ovens broiler pan. Brush top with mixture from #6. (Original instructions call for one loaf in lightly greased 9x5 loafpan.)
  • Bake for 1 hour and 20 min to 1 hour 30 minutes or until meat thermometer registers 155 degree. Reserve 1 cup drippings
  • GRAVY - 1 1/2 Tbsp butter; 1 Tbsp all purpose flour; 1/2 cup beef (or chicken) broth; the 1 cup of saved drippings; 1/4 tsp salt; 1 tsp freshly ground pepper; 1/4 tsp fresh lemon juice (I did not use the lemon juice)
