Award Winning Moist Banana Cake With Frosting image

This recipe won the Grand Prize in our local newspaper several years ago and is the only one I'll ever use. So incredibly delicious... I'll bet you can't eat just one piece! Our family favorite. Can be made in 2- 9" round pans, if desired. Adjust cooking time accordingly.

CAKE:
1 1/2 cup(s) mashed, ripe bananas
2 teaspoon(s) lemon juice
3 cup(s) flour
1 1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3/4 cup(s) butter, softened
2 1/8 cup(s) sugar
3 large eggs
2 teaspoon(s) vanilla
1 1/2 cup(s) buttermilk
FROSTING:
1/2 cup(s) butter, softened
1 - 8 oz. pkg. cream cheese
1 pinch(es) salt
1 teaspoon(s) vanilla
3 1/2 cup(s) powdered sugar
- chopped walnuts to garnish, optional

Steps:

  • Preheat oven to 275 degrees. Grease a 9"x13" pan. Mix mashed banana with lemon juice and set aside.
  • In medium bowl, blend flour, baking soda and salt and set aside.
  • In large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla. Start to mix in the flour mixture alternately with the buttermilk. Stir in the banana mixture by hand.
  • Pour into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean. Do not over-bake. Remove from oven and place directly into the freezer for 45 minutes. (Don't skip this step... this is important.)
  • For frosting, cream butter and cream cheese . Add remaining ingredients and beat on high until light and fluffy. Spread on cooled cake. Garnish with chopped nuts, if desired.
