At the last minute, I decided to enter the Montana Wild West Fest Chili Cook-off on August 14, 2010. I found a recipe on-line and played with it and ended up winning Third Place!

AWARD WINNING CHILI
2 can(s) (14.5 ounces) diced tomatoes with onions, garlic & oregano
1 can(s) (14.5 ounces) tomato sauce
1/4 cup(s) white wine
4 - slices applewood smoked bacon, cut into pieces
1 1/2 pound(s) ground beef
1 - medium onion, chopped
1/2 - 1 package(s) (1.25 ounces) chili seasoning mix - depends on how spicy you like it
1 teaspoon(s) ground cumin
1 teaspoon(s) salt-free mrs. dash's original seasoning blend
1 teaspoon(s) emeril's original essence seasoning
1 1/2 teaspoon(s) weber gourmet burger seasoning
1/2 can(s) (15 ounce) carrots, chopped
2 can(s) (15 ounce) kidney beans, drained
3 - squirts worcestershire sauce
- salt and pepper to taste

Steps:

  • In a large skillet over medium heat, cook bacon until crisp. Remove to paper towels and drain. Cook beef, onions, and chili seasoning mix, and seasonings in bacon grease until brown (don't drain; this adds more flavor to the chili). Cook together until beef is done.
  • Stir in the diced tomatoes, tomato sauce, bacon, carrots, kidney beans, Worcestershire sauce, and salt and pepper to the beef mixture. Cook for 20 minutes on low-medium heat to blend the flavors.
  • Notes: Use a white wine that you like to drink; Chardonnay is good.
