Autumn Potluck Soup image

Number Of Ingredients 13

3 tablespoons butter or margarine
1 medium onion, chopped
1 1/2 to 2 pound ground beef
3 (14 1/2-ounce) cans beef broth
3 cups water
1 (29-ounce) can diced tomato, with liquid
4 carrots, sliced
2 ribs celery plus leaves, chopped
1 cup uncooked shell macaroni
1 teaspoon parsley
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a stockpot, saute butter and onion until onion is transparent. Remove onion and set aside. In the same pan, brown ground beef until meat is no longer pink. Drain well. Return onion, and add remaining ingredients. Bring to a boil over medium-high heat. Reduce heat and simmer for 15-20 minutes, or until macaroni is done.
