Aunt Stella's Zucchini image

A dear Polish Lady gave me this recipe in 1975. I love it and her and I hope you like it also. Kay

Number Of Ingredients 9

1 stick(s) butter
1 medium chopped onion
1 medium green pepper
4 cup(s) diced zucchini
4 cup(s) diced yellow summer squash
1 teaspoon(s) garlic powder
4 - 5 large eggs
2 cup(s) shredded cheddar cheese
4 - 5 slice(s) bread

Steps:

  • Melt butter - add onion, green pepper and garlic powder. Saute - then add diced squash. Stir - put on lid - cook until soft. About 20 min. Remove from heat. In a large bowl, beat eggs, add the bread which was torn into small pieces. Add the cheese. Mix well and blend into the squash mixture. Put into a greased baking dish. Bake at 350° for 25 minutes. Use small tender squash. Serve warm.
