Auf-Lauf image

This came from a old cookbook I found. This time of year makes you want to bake with apples and these old recipes are wonderful and I love to share them. It is way too sad that they get lost and forgotten. Enjoy!

1 Tbsp butter
1/4 c brown sugar
2 c apples, diced
2 egg yolks
1 1/2 Tbsp water
1/2 tsp baking powder
2 egg whites
1/2 c sugar
1/2 c flour
1/2 tsp vanilla
1/4 c nuts, chopped

Steps:

  • 1. Butter casserole dish and sprinkle with brown sugar.
  • 2. Fill about 1/3 full with peeled chopped apples. Bake 350 degrees until partially soft.
  • 3. Beat egg yolks and sugar: then add water. Add sifted flour and baking powder. Add vanilla and nuts, mix.
  • 4. Fold in stiffly beaten egg whites.
  • 5. Pour over apples and bake about 30 minutes at 325. Serve hot.
