Au Gratin Potatoes image

Just a simple au gratin potato recipe. Par boiling the potatoes insures it will get tender, if you've ever fixed au gratin potatoes from scratch you know what I mean.

2 large potatoes
1/2 medium onion (white or yellow)
1/2 can(s) condensed milk
1-2 c skim milk
6 slice american cheese
1/2 c cheddar cheese, shredded
6 Tbsp all purpose flour divided
2 Tbsp cornmeal
3 slice hickory smoked bacon chopped

Steps:

  • 1. On a mandolin slicer, slice potatoes to a medium thickness, rinse and cover with water, bring to a boil. Cook 3 min turn off
  • 2. Slice half of a medium onion to the same thickness, add to potatoes in pan. Let sit 2-4 min
  • 3. Cook bacon and chop. Drain potatoes and onions place in bowl, add 3 Tbs flour and cornmeal, toss to cover, add chopped bacon. Set aside.
  • 4. Drain pan bacon was cooked in, and add 3 Tbs butter, melt and add 3 Tbs flour, stir till it just starts to thicken, add both milks, stir till smooth, remove from heat, add cheese a little at a time, stir till smooth.
  • 5. Pour potatoes, onions and bacon in a baking dish, pour milk and cheese mixture over and bake at 350 for 25 min loosely covered, then remove cover and bake an additional 15-20 min or till potatoes are tender and top is starting to brown. Enjoy!!!!!
