Steps:
- Cut potatoes into planks 1/3" - 1/2" thick
- Preheat oven to 425°
- Spray cookie sheet with non-stick spray, then add oil and rock back and forth to cover
- Add corn starch to water in bowl, whisk to combine, then microwave 2 minute to thicken
- Coat potatoes with corn starch gloop
- Lay them out on cookie sheet with room to breathe, then cover with foil
- Bake for 12 minutes
- Remove foil and bake for 15 more
- Flip potatoes, then bake for 12-15 more
- While hot, sprinkle with salt, then serve
