Steps:
- Assemble a double boiler. In bowl, whisk egg yolks, lemon juice and water; add to broiler and whisk constantly until mixture begins to thicken. Season w/ salt, pepper and cayenne. Slowly incorporate melted butter and herbs. Place 2 baguette toasts on eah of 4 plates. Top w/1 egg and asparagus. Spoon hollandaise over top.
