ASPARAGUS W/POACHED EGGS AND HOLLANDAISE SAUCE image

Number Of Ingredients 10

2 egg yolks
1T fresh lemon juice
2t water
salt and pepper to taste
pinch of Cayenne
16T unsalted butter, melted
2T chopped fine herbs (chervil, chives, tarragon and parsley)
8 baguette slices (toasted)
8 poached eggs
1 1/2 lbs. asparagus (trimmed, peeled and steamed)

Steps:

  • Assemble a double boiler. In bowl, whisk egg yolks, lemon juice and water; add to broiler and whisk constantly until mixture begins to thicken. Season w/ salt, pepper and cayenne. Slowly incorporate melted butter and herbs. Place 2 baguette toasts on eah of 4 plates. Top w/1 egg and asparagus. Spoon hollandaise over top.
