ASPARAGUS ROLL UPS image

Yield 15-20 roll ups

Number Of Ingredients 5

2 tsp finely chopped onion
1 cup mayonnaise
1 (7.5 oz) crab meat, drained and crumbled
10 slices rye bread, crusts removed
10-15 asparagus spears, blanched if necessary

Steps:

  • 1. Mix the onions, mayonnaise, and crab meat together. 2. roll each slice of bread flat with a rolling pin. Place the crab meat mixture on each slice of the bread. Place an asparagus spear in the center of each piece of bread, roll up. 3. Place on a pan, seam side down. Refrigerate at least two hours or until ready to serve. 4. Cut into bite size pieces before serving. Can be made up to two days ahead.
