Asparagus Frittata image

The farmer market vegetable stand is openand the asparagus is high on the list and soon other vegetables will be available right out of the garden, on to the farmers vegie stand and into my house to prepare great vegetable dishes.

Number Of Ingredients 8

24 asparagus spears,
6 egg whites
3 eggs
1 1/3 c grated parmesan cheese
1/4 c milk
3 Tbsp fresh sliced chives
1 Tbsp plus 1 tsp olive oil
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350F..wash asparagus, cut off the hard end and discard..Add asparagus to a pot of boiling water cook 2 minutes until just tender about 2 minutes drain and rinse in cold water, drain again, set aside.
  • 2. In large with wire whisk combine egg whites, eggs,cheese.\, milk and chives s and p.
  • 3. In large skillet which can be placed into oven to bake, heat oil add asparagus, cook over medium heat stirring constantly until coated, reduce heat to low pour egg mixture into skille,stir qyuckly cook for 5 minutes until edges are set..transfer skillet to oven and bake 10 minutes until egg mix is firm...cut into wedges to serve. a side order of bacon goes well. along with raisin, cinnamon bread, toasted.....
