ASIAN SALMON SPREAD image

1 8-ounce boneless,
skinless salmon fillet
1 tablespoon olive oil
1 serrano chile, diced
1 tablespoon chopped fresh
cilantro plus more for
garnish
2 teaspoons Dijon mustard
2 teaspoons thinly sliced
scallion
1 teaspoon sesame oil
1 teaspoon grated fresh
ginger
1 teaspoon soy sauce
Salt and freshly ground
black pepper to taste
Sesame seeds, toasted
Sesame or other crackers

Steps:

  • 1. Preheat the oven to 400 degrees. 2. Rub the baking sheet with the olive oil. Spread the salmon with 1/2 teaspoon of the sesame oil and put it on the baking sheet. Roast for about 10 minutes, until just opaque in the center. Put the salmon in a medium bowl and let it cool for about 5 minutes. 3. Add the chile, chopped cilantro, mustard, scallion, remaining sesame oil, ginger, and soy sauce and mix to combine well, breaking up the salmon into small pieces. 4. Season with salt and pepper to taste. Garnish with cilantro leaves and sesame seeds. Serve with crackers
