Artichoke and Crab Balls image

My family loves to have these any time. They are a great comfort food.

Number Of Ingredients 7

2 cup(s) bread crumbs, seasoned
14 ounce(s) artichoke hearts, canned - drained and mashed
1 can(s) crabmeat, flaked
2 - eggs, beaten
1 cup(s) parmesan cheese, grated
2 clove(s) garlic, crushed
1/3 cup(s) olive oil, any flavor

Steps:

  • Heat the oil in a heavy non-stick pan over medium high heat. Saute garlic for about 3 minutes. Then add the mashed artichoke hearts and crab meat and cook for 2-3 minutes until hot.
  • Stir in the eggs and cook 2-3 minutes until they begin to set. Stir in 1-1/2 cups of the bread crumbs and salt and pepper to taste and cook another 2 minutes until hot. Remove from the heat. Stir in the cheese. Mix thoroughly and set aside to cool.
  • Preheat oven to 350F. When mixture is cool enough to handle, roll into bite size balls. Roll balls in additional breadcrumbs and arrange on a baking sheet. Bake for 10 minutes.
