This is my grandma's recipe for a deliciously moist and fun cake because it has the surprise ingredient of sauerkraut ! You can just dust it with powdered sugar or use the sour cream chocolate frosting....it reminds me of the textureof a good carrot cake.

- 1. Preheat ocen to 350 degrees. Spray a 9 x 13 cake pan with cooking spray. Dust lightly with a little cocoa powder or flour. Chop the kraut nto smaller shreds. In a medium bowl, mix together the flour, cocoa, baking powder, soda and salt. In a large bowl, beat the butter and sugar with electric mixer until creamy. Beat in vanilla, then beat in eggs, one at a time. Add the flour mixture alternating with the coffee on low speed until just mixed. Stir in the kraut and chocolate chips. Pour batter into prepared pan. Place on center rack of 350 degree oven and bake 30-35 minutes until toothpick in center comes out clean. Remove and cool in the pan.
- 2. At this point you could simply sift a little powdered sugar on top to serve....or follow frosting recipe :
- 3. For frosting, melt butter in a medium glass bowl in microwave on high. Add the chocolate chps abd stir until fairly melted. Microwave a few seconds more t melt cocolate completely. Place sour ream in a large bowl, add melted chocolate and vanilla. Using mixer, beat in powdered sugar 1 C at a time until creamy smooth...adding a little milk if needed to thin out.
- 4. Spread frosting over cooled cake.
