Steps:
- Soak apricots in warm water until softened. Drain and puree in food processor. Set aside. Cut the shortening into the flour until crumbled. Add cream cheese and continue to cut into shortening/flour mixture. Mix by hand into a dough. Refrigerate over night. Preheat oven to 325degrees F. Roll small batches of dough with rolling pin on floured surface into a square. Cut into 3 inch squares. Spread a ½ teaspoon of apricot, more or less to your liking, along the center of each square. Roll and place on baking sheet seam side down 1 ½ inches apart. Bake on middle rack until golden brown approximately 10-20 minutes. Let cool then roll in sugar. Store in refrigerator or can also be frozen.
