APRICOT OATBRAN MUFFINS image

Yield 12 muffins

Number Of Ingredients 11

1 cup oat bran
1 1/2 cups flour (I use whole wheat pastry flour from health
food stores)
1/8cup honey
1tablespoon baking powder
2 egg whites -- or 1 whole egg
1 cup buttermilk
1 teaspoon vanilla extract
1/4 cup vegetable oil
1/4 cup apricot preserves
1/8 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Prepare muffin tin by either greasing or using cupcake liners. In a large bowl, mix together dry ingredients and make a well in the center. In a separate bowl, mix wet ingredients well and add to dry ingredients. Mix till combined, but don't overdo it unless you happen to enjoy really hard muffins. Spoon batter into prepared muffin tin, filling each cup 3/4 full. Bake for 18-20 minutes. Cool for 5 minutes in muffin tin, then remove individual muffins to a wire rack to cool.
