APRICOT & CHOCOLATE CHIP COOKIES image

Yield 12 - 14 Cookies

Number Of Ingredients 8

3 oz Butter, softened, plus extra for greasing
2 Tbsp golden granulated sugar
1/4 cup light brown sugar
1/2 tsp vanilla extract
1 egg, beaten
Generous 1 cup self-rising flour
4 oz semisweet chocolate, coarsely chopped
2/3 cup no-soak dried apricots, coarsely chopped

Steps:

  • Place the butter, granulated sugar, brown sugar, and vanilla extract in a bowl and beat together. Gradually beat in the egg until light and fluffy. Sift the flour over the cookie batter and fold in, then fold in the chocolate and apricots. Put tablespoonfuls of the cookie batter onto two greased cookie sheets, allowing space for the cookies to spread. Bake in a preheated oven, 350 degrees F, for 13-15 minutes, or until crisp outside but still soft inside. Let cool on the cookie sheet for 2 minutes, then transfer to wire racks to cook completely.
