Apricot 7-up Salad image

This is a great pot luck dish.All the flavors are just unbelivably good.One of the best I've came across in a while.Give it a try and enjoy!

Number Of Ingredients 12

1 large pkg. apricot jello
1 cup(s) boiling water
3 cup(s) 7-up soda ( reg. or diet )
4 or 5 - bananas sliced (about 3 cups ) not too ripe
1 1/2 cup(s) miniature marshmallows
1 large can crushed pineapple ( drained - save syrup )
- topping :
1 cup(s) pineapple syurp ( add water to make 1 cup )
1 - egg ( well beaten )
1/2 cup(s) sugar
2 tablespoon(s) cornstarch
1 cup(s) heavy whipping cream (whipped )

Steps:

  • Use 13" x 9" casserole dish. In a bowl mix jello and boiling water then add the 3 cups 7-up.Let set-up until slightly thick in refrigerator in the casserole dish.
  • Fold in : Bananas, marshmallows and drained pineapple.Let jello set -up completely and add topping.
  • Topping : Mix pineapple syrup, egg ,sugar and cornstarch and bring to boil, stirring constantly.Cook until thick then let cool completely.Beat whipping cream til stiff peaks form then fold into pineapple mixture.Spread on jello and keep in fridge.
