Apples in Lemon Sauce image

Number Of Ingredients 8

2 Large Golden Delicious Apples
1 1/2 tablespoon Fresh lemon juice
3 tablespoon Apricot or other preserves
1/4 cup ice water
2 tablespoon unsalted butter
1 1/2 tablespoon sugar
1/4 cup dried cranberries
1/4 cup sour cream or creme fraiche

Steps:

  • Preheat oven to 400 degrees.
  • Halve the apples lengthwise and core them. Peel about half the skin from each apple piece, leaving the remainder to give chewiness to the finished dish. Arrange the apples cut side up in a small gratin dish.
  • Mix the lemon juice, preserves and water together in a small bowl and spoon the mixture over the apples. Divide the butter among the apple hollows and sprinkle the apples with the sugar. Sprinkle cranberries around and on top of the apples
