Apple-Walnut Stuffing image

Number Of Ingredients 13

1 pound day-old loaf bread, cut into large croutons
3 large onions, chopped
4 tablespoons butter
5 stalks celery, chopped
2 cups sliced leeks
4 large Granny Smith apples, diced
2 cups toasted chopped walnuts
2 tablespoons celery seed
2 tablespoons chopped fresh sage
1 tablespoon poultry seasoning
2 eggs, beaten
4 cups dark turkey stock
salt and black pepper to taste

Steps:

  • Place croutons in a large bowl. In a saucepan, sauté onions in butter until translucent. add celery, leeks, and apples. Continue to cook a few minutes more. Pour mixture over croutons and cool to room temperature. Add walnuts, celery seed, sage, and poultry seasoning to cooled mixture; combine thoroughly. Mix in eggs and enough stock to moisten. Season with salt and pepper. Transfer stuffing to lightly greased 9x13-inch baking dish. Cover with aluminum foil. bake at 350° until stuffing is heated through, about 30 minutes. Uncover stuffing and bake until top is crisp, about 20 minutes. The dressing may also be stuffed into the turkey cavity. Fun Fact: The old saying, "An apple a day keeps the doctor away," comes from an old English adage, "To eat an apple before going to bed will make the doctor beg his bread."
