Apple Pound Cake image

I found this recipe years ago on the Internet. It's a family favorite in the fall when fresh apples are in abundance.

Number Of Ingredients 12

2 cup(s) flour
2 cup(s) sugar
1 teaspoon(s) baking soda
3 - eggs
1 teaspoon(s) salt
2 teaspoon(s) vanilla
1/2 teaspoon(s) cinnamon
2 cup(s) apples; finely chopped
1/2 teaspoon(s) nutmeg
1/2 cup(s) raisins
1/2 cup(s) oil
1 cup(s) chopped pecans (optional

Steps:

  • In mixing bowl, combine flour, baking soda, salt, cinnamon and nutmeg. With mixer at medium speed, beat together oil, sugar, eggs and vanilla. Gradually add flour mixture, beating until smooth. Fold in apples, pecans and raisins. Pour into greased and floured 10 inch tube pan. Bake at 325 for 1 hour and 15 minutes, or until toothpick inserted in center comes out clean.   • Use icing of your choice. The one shown is caramel. I really prefer plain confectioner's sugar dusted on.
