Steps:
- Preheat the oven to 400 degrees F and line a baking sheet with foil.
- Set a medium skillet over medium heat. Add the butter and heat until melted, then remove half of the butter to a bowl and set aside. Add the apples to the skillet along with the salt, 1/4 cup sugar, 1 teaspoon cinnamon and 1 pinch ras el hanout. Cook, stirring every now and then, until the apples have softened, about 5 minutes.
- Turn the heat off and pull the skillet off the heat. Add the tequila, then set it on fire using a stick lighter. Shake the pan gently to distribute the tequila and wait for the flames to die down. Set back on low heat and cook for a few minutes to reduce further. Set aside.
- Mix the remaining 1/4 cup sugar, 1 teaspoon cinnamon and pinch ras el hanout together in a bowl.
- Warm the tortillas over an open flame. Spread a spoonful of apple filling in each tortilla. Roll the tortillas over the filling and keep rolling until you have a cigar. Place the taquito seam-side down on the lined baking sheet. Brush with the reserved melted butter, then sprinkle with the cinnamon-spice sugar. Repeat with the remaining tortillas.
- Bake until crispy, 10 to 15 minutes.
