Steps:
- 1. Preheat oven to 425 degrees 2. Prepare the pastry, saving about 1/3 of the pastry for the top 3. Stir together the sugars, flour, and seasonings 4. Add the apples and mix well 5. Fill bottom of the pie pan with the pastry and fill with about 1/2 cup apple filling for each small pie 6. Cover with top crust which has been criss-crossed 7. Dot the top of the pie with little bits of butter and cinnamon/sugar mixture 8. Bake 25-30 minutes. If crust starts to get too brown, put small strips of aluminum foil around the edges
