Carrot Pound Cake image

This is an exremely moist carrot cake that doesn't require any frosting to make it delicious.

Number Of Ingredients 11

3 large eggs
2 cup(s) sugar
1 1/2 cup(s) vegetable oil
3 cup(s) all purpose flour
2 teaspoon(s) soda
1 teaspoon(s) salt
2 teaspoon(s) ground cinnamon
1 1/2 cup(s) grated carrots
1 cup(s) chopped nuts
1 can(s) 20 oz can of crushed pineapple well drained
2 teaspoon(s) vanilla extract

Steps:

  • Combine eggs, sugar and oil in a large mixing bowl; beat well.
  • Gradually beat in flour, soda, salt and cinnamon.
  • Stir in carrots, nuts, pineapple and vanilla.
  • Pour into greased and floured 10 inch tube pan.
  • Bake at 350 degrees for 1 hr and 15 minutes.
