Apple Peanut Butter Cookies image

I substituted 1/4 cup butter and 3 TBSP coconut oil for the shortening. I did not have crunchy peanut butter so I chopped up a handful of peanuts and stirred them in with the apple. Number Of Ingredients 11

1/2 c shortening
1/2 c chunky peanut butter
1/2 c granulated sugar
1/2 c brownsugar
1 egg
1/2 tsp vanilla extract
1 1/2 c all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 c peeled and grated apple

Steps:

  • 1. In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy.
  • 2. Beat in egg and vanilla.
  • 3. Combine the dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.
  • 4. Drop by rounded tablespoonfuls onto greased baking sheet 2 inches apart. They will spread.
  • 5. Bake at 375 degrees for 10 - 12 minutes or until golden brown. Cool on baking sheet for 5 minutes before removing to wire racks.
  • 6. Reduced fat peanut butter is not recommended for this recipe.
