Steps:
- 1. In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy.
- 2. Beat in egg and vanilla.
- 3. Combine the dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.
- 4. Drop by rounded tablespoonfuls onto greased baking sheet 2 inches apart. They will spread.
- 5. Bake at 375 degrees for 10 - 12 minutes or until golden brown. Cool on baking sheet for 5 minutes before removing to wire racks.
- 6. Reduced fat peanut butter is not recommended for this recipe.
