APPLE NUT CAKE image

One day after school Mom had this cake made for supper and an after school snack. Mom taught me how to make this cake. Thank's for the memories mom.

Number Of Ingredients 19

CAKE:
1 1/2 c sugar
1 c brown sugar, firmly packed
3 c flour
1/2 tsp nutmeg
3 1/2 c peeled tart apples about 2 lb's cut into large dice 9 granny smith or newton
2 tsp vanilla
1 1/2 c oil
3 eggs
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 c very coarsely chopped english walnuts or black walnuts
GLAZE:
3 Tbsp butter
3 Tbsp sugar
1/4 tsp vanilla
3 Tbsp light brown sugar
3 Tbsp whipping cream

Steps:

  • 1. CAKE: Preheat oven to 325 degrees. Generously butter and flour 10 inch tube pan shaking out excess
  • 2. Combine the first ingredients in a large bowl and blend well. Add eggs one at a time, beating well after each one.
  • 3. Sift together dry ingredients. Add to first mixture blending thoroughly.
  • 4. Fold in apples, nuts and vanilla. Spoon into prepared pan evenly.
  • 5. Bake until cake tests done with a toothpick inserted comes out clean, About1 3/4 hours Let cool in pan 20 minutes.
  • 6. Turnout onto a wire rack and continue cooling while preparing glaze.
  • 7. GLAZE: Combine all ingredients in a heavy saucepan and bring to a boil over medium heat. Let boil 1 minute. Spoon or pour over warm cake.
