Apple Muffins image

Make these Apple Muffins extra moist with help from low-fat cottage cheese. Serve these cinnamon-scented Apple Muffins as a morning treat.

1-1/2 cups flour
1/2 cup packed brown sugar
1-1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. baking soda
1 egg
1/4 cup oil
1 tsp. vanilla
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 Granny Smith apple, finely chopped

Steps:

  • Heat oven to 400ºF.
  • Combine first 6 ingredients.
  • Whisk egg, oil and vanilla in large bowl until blended. Stir in cottage cheese and apples. Add flour mixture; stir just until moistened.
  • Spoon into 12 paper-lined muffin cups.
  • Bake 25 min. or until golden brown.
