I found a couple of my long lost small paperback cookbooks that I had purchased sometime back in the 90's...I couldn't believe my eyes when I found them. In finding them I have found a treasure of goodies in these two little books. I had this particular recipes marked to try...never did because I misplaced the books before I...

SAUCE:
2 c granulated sugar
2 c water
1/4 c margarine or butter
1/4 tsp ground cinnamon
1/4 tsp nutmeg
DOUGH:
2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 c shortening
2/3 c milk
FILLING:
1/4 c granulated sugar
1/2 tsp ground cinnamon
3 c shredded, peeled granny smith apples (3-4 medium)

Steps:

  • 1. For sauce, in a large saucepan, combine 2 cups sugar, the water, margarine, 1/4 t. each of cinnamon and nutmeg. Bring to boiling and boil for 5 minutes; set aside (should have about 2 cups of sauce).
  • 2. For dough, in a large mixing bowl, combine flour, baking powder, and salt. Using a pastry blender, cut in shortening until pea-size. Make well in center. Add milk all at once. Stir just until moistened. Knead dough on a lightly floured surface 10-12 strokes or until nearly smooth. Roll out to 12X10 inch rectangle.
  • 3. For filling, combine 1/4 cup sugar and 1/2 t. cinnamon; set aside. Sprinkle apples evenly over dough. Sprinkle with sugar mixture. Roll dough into spiral starting from a long side. Pinch seam to seal. Cut into twelve 1-inch thick pieces. Pour sauce over dumplings. Bake in a 350 degree oven for about 50 minutes or until golden brown. Serves 12...Enjoy!
  • 4. This recipe could be made with peaches, diced finely or pears. It would also be awesome with whipping cream or ice cream to top it off! YUM May add walnuts if desired...
