Apple-Cinnamon Muffins image

These muffins are quick and easy to make. I like these with a cup of hot tea.

1 egg, beaten
3 Tbsp sugar
1/4 c milk
1/4 c butter, melted
1 1/4 c flour
1 1/2 tsp baking powder
pinch of salt
1/2 tsp cinnamon
2 apples, peeled, cored and finely chopped
3 Tbsp raw sugar
1 tsp cinnamon

Steps:

  • 1. Preheat oven to 400°. Line large muffin pan with paper liners.
  • 2. Mix egg, sugar, milk and melted butter in large bowl.
  • 3. Sift in the flour, baking powder, salt and cinnamon.
  • 4. Add the chopped apple and mix coarsely. (Tip: Do not over mix the muffin mixture - it should be lumpy.)
  • 5. Spoon the miffin batter into the paper-lined muffin pan.
  • 6. Make topping mix by mixing raw sugar with remaining 1 teaspoon of cinnamon. Sprinkle over the uncooked muffins.
  • 7. Bake for 30-35 minutes, until golden brown.
  • 8. Transfer to wire rack to cool.
