Number Of Ingredients 11

1/3 cup sugar, divided
1-1/4 cups flour
1/2 cup creamy wheat (enriched farina) hot cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked
1 Tbsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup apple juice, divided
1/2 cup milk
1 egg, lightly beaten
2 Tbsp. margarine or butter, melted
1 small apple, peeled, chopped (about 1 cup)

Steps:

  • Preheat oven to 400°F. Remove 1 Tbsp. of the sugar; set aside for later use. Mix remaining sugar, the flour, cereal, baking powder, cinnamon and salt in large bowl until well blended; set aside. Remove 2 Tbsp. of the apple juice for later use. Beat remaining juice, the milk, egg and margarine with wire whisk until well blended. Add to dry ingredients; stir just until moistened. Gently stir in apples.
  • Spoon evenly into 12 greased medium muffin cups.
  • Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Remove from pan; brush tops with the reserved juice. Sprinkle with the reserved sugar. Serve warm.
