APPLE CAKE WITH CARAMEL SAUCE image

Number Of Ingredients 17

For cake:
l 1/3 C vegetable oil
3 C flour
1 T cinnamon
1 t baking soda
1 t salt
2 C sugar
3 large eggs
3 C tart apples cored and cut in 3" chunks (3-4 apples)
1 C assorted nuts (optional)
1 T vanilla
For caramel sauce:
1 C light brown sugar
1 stick butter
1/4 C evaporated milk
1 t. vanilla
pinch salt

Steps:

  • For cake: Preheat oven to 350. Grease and flour a 12 C bundt pan (or spray with oil spray with flour). Sift flour, baking soda, cinnamon and salt onto a piece of parchment paper. In mixer, mix oil, sugar and eggs and beat on high speed until a lemon yellow. Stir in flour mixture; blend carefully. Fold in apples and nuts, if desired. Stir in vanilla. Pour into pan and bake 75-90 min or until tester comes out clean. Cool slightly on rack, then invert on rack to remove pan and cool completely. Serve with caramel sauce drizzled over. For caramel sauce: Combine ingredients in small saucepan over medium heat and cook, stirring, until desired consistency to drizzle over cake.
