Apple Bars image

I opened a can of worms the other day when I mentioned working at an Apple Farm in NY. I was overwhelmed with the number of apple recipes that I had collected from those days. Here is a great bar cookie that all kids like.

Number Of Ingredients 10

1/2 c butter, unsalted, room temperature
1 c sugar
1 tsp pure vanilla extract
1 large egg, beaten
1 1/2 c all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp freshly grated nutmeg
1 c apples, peeled, cored and chopped
1/2 c nuts, optional

Steps:

  • 1. In a large bowl, beat together butter and sugar until fluffy; stir in vanilla and egg. In a small bowl, combine flour, baking soda, baking powder, and nutmeg.
  • 2. Add flour mixture to butter mixture; mix thoroughly. Fold in apples and nuts if using.
  • 3. Spread batter in a greased 9" x 9" baking pan. Bake at 350-degrees for 30-35 minutes. Cool and cut into squares.
  • 4. When I leave the nuts out, I often add in 3/4 cup of raisins in it's place.
