Steps:
- Heat oil in large skillet and cook garlic until it begins to sizzle. Add pancetta strips and cook until brown but not crisp. Add canned chopped tomatoes, red pepper flakes and salt ( don't add salt if pancetta is already salty.) Reduce heat and simmer until tomatoes have reduced and separated ( about 30-40 minutes) Cook pasta. Drain and toss with sauce. Stir in grated cheese
