5 pounds bone-in beef short ribs

1 yellow onion, finely chopped (2 to 3 cups)
4 cloves garlic, minced
1 cup dry red wine, such as Cabernet or Chianti or Zinfandel
16 to 20 flour or corn tortillas, warmed
1 cup Mexican crema, sour cream, or crème fraîche
Cilantro leaves, for serving
