Amazing Brownies image

These brownies taste like chocolate Madeleine cookies--they are just wonderful, and can be served as brownies or as cupcakes. Not only that, you only need two pans to make them: the pot in which the butter is melted, and the pan into which you pour the batter.

Number Of Ingredients 8

2 cups white sugar
1 cup butter
1/2 cup cocoa powder (Dutch processed is best)
1 teaspoon vanilla extract
4 eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 350* F.
  • Melt the butter in a medium-large pan.
  • Let cool slightly; then mix in the ingredients in the order given.
  • Bake in either a greased brownie pan or a lined muffin pan.
  • Bake for 35-45 minutes, checking after 30 minutes.
  • The brownies are done when a toothpick comes out with a few moist crumbs.
