Almond Pound Cake image

An easy to make, rich, nutty flavored cake.

Number Of Ingredients 17

1-1/2 cup(s) flour
1/2 teaspoon(s) salt
2 tablespoon(s) butter, softened
2/3 cup(s) sugar
2 - eggs, large
1/2 cup(s) sliced almonds
1/2 cup(s) milk
1/2 teaspoon(s) vanilla
8 ounce(s) almond paste
1-1/2 teaspoon(s) baking powder
2 tablespoon(s) canola oil
TOPPING
1/2 cup(s) powdered sugar
1 tablespoon(s) milk
1/4 teaspoon(s) almond extract
1/4 teaspoon(s) vanilla
2 tablespoon(s) almonds

Steps:

  • Sift together dry ingredients. Set aside. Place sugar and almond paste in a food processor and pulse until combined. It should have the consistency of sand. Add butter and oil to almond paste mixture and mix well, about 2 minutes. Add eggs, one at a time. Add vanilla and mix. Gradually add flour mixture and 1/2 cup milk, starting and ending with flour. Mix until just combined.
  • Pour into 1 greased and floured loaf pan. Bake at 350 degrees for 45 to 50 minutes. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on a wire rack.
  • TOPPING: Whisk together powdered sugar and milk until smooth, adding additional milk if needed. Stir in extracts. Drizzle over cooled cake and top with sliced almonds.
