Almond Cookies image

I found this recipe on a Crisco display in the grocery store. I like to make at least one cookie for the holidays that is flavored with almond extract. These cookies are easy to make and are sweet and tender. Much like the cookies you get in a Chinese restaurant except they are more like a shortbread and not as "hard".

1 c vegetable shortening (crisco)
1 c sugar
1 large egg
1 1/2 tsp almond extract
2 1/4 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
whole or sliced almonds (for garnish)

Steps:

  • 1. Beat shortening and sugar in a large bowl with and electric mixer until light and fluffy (about 4-5 minutes).
  • 2. Beat in egg and almond extract until well combined.
  • 3. Combine flour, baking powder and salt in medium bowl. Gradually add to shortening mixture, beating well until well combined. Shape dough into ball and wrap in waxed paper. Chill at least 2 hours (or overnight).
  • 4. Heat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  • 5. Roll tablespoonfuls of dough into 1-inch balls. Place on prepared cookie sheet about 2 inches apart. Flatten slightly with fingertips. Gently press one whole almond or a few almond slices into each cookie.
  • 6. Bake 11-13 minutes or until cookies are set and slightly browned around the bottom edges. Cool 5 minutes then transfer to wire rack to cool completely.
  • 7. Makes about 4 dozen
