- 1. In a 4- or 5-quart slow cooker, combine the first 13 ingredients. If desired, cut chicken into bite-size pieces.
- 2. Cook, covered, on LOW for 8-10 hours or until potatoes are tender. Stir in spinach and cook until wilted, about 5 minutes. Serve immediately.
