Found this jewel in the latest issue of Taste of Home. Soup is a good thing, right? Any time of year. And when prepared in your slow cooker you don't have to heat up the kitchen when the weather is warm. Photo: Tasteofhome.com 05-30-14

2 - 3 c cut-up chicken breasts, boneless and skinless
2 c chicken broth
1 can(s) (14.5 oz.) diced tomatoes, undrained
1 pkg (10 oz.) frozen corn
1 1/2 c cubed red potatoes
1 medium onion, chopped
1 medium sweet red or yellow pepper, chopped
1 medium green pepper, chopped
1 can(s) (4 oz.) chopped green chilies
1 tsp ground cumin
½ tsp garlic powder
¼ tsp freshly ground pepper
1 tsp salt
1 1/2 c fresh baby spinach

Steps:

  • 1. In a 4- or 5-quart slow cooker, combine the first 13 ingredients. If desired, cut chicken into bite-size pieces.
  • 2. Cook, covered, on LOW for 8-10 hours or until potatoes are tender. Stir in spinach and cook until wilted, about 5 minutes. Serve immediately.
