Steps:
- 1. Preheat oven to 425 degrees F.
- 2. Spray a 9-inch deep-dish pie plate with vegetable non-stick cooking spray.
- 3. In a large bowl, combine brown sugar, granulated sugar, flour, lemon peel, cinnamon, and nutmeg.
- 4. Mix well.
- 5. Add apples to sugar mixture; stir until coated.
- 6. Stir in raisins.
- 7. Spoon into prepared plate.
- 8. Place piecrust on top of filling.
- 9. Trim edges, pressing against edge of pan.
- 10. Using a sharp knife, cut steam vents in piecrust.
- 11. To glaze, lightly brush piecrust with beaten egg then sprinkle with sugar.
- 12. Bake until piecrust is golden brown, about 35 to 40 minutes.
- 13. Place on a wire rack and cool for 30 minutes.
- 14. Serve warm.
