Air Fryer Quick Chicken Parmesan image

Made with convenience items like ground chicken, minced garlic in a jar, and prepared pizza sauce, and cooked up in an oven-style air fryer, this take on classic Chicken Parmesan is fast, easy, and delicious. Toss a side salad while it's cooking, and dinner is on the table in less than 25 minutes! Four servings, each 420 calories

1 pound(s) ground chicken
½ cup + 2 tablespoon(s) italian bread crumbs (divided use)
3/4 cup(s) grated parmesan cheese (divided use)
1/2 cup(s) chopped fresh parsley (or 1-2 tbs dried)
1/4 cup(s) plain yogurt
one egg
2-3 teaspoon(s) minced garlic
1 teaspoon(s) salt
cooking spray
14 oz jar(s) pizza sauce
3/4 cup(s) shredded mozzarella cheese

Steps:

  • Preheat your air fry oven to 400 degrees.
  • In a mixing bowl, combine the ground chicken with ½ cup of the bread crumbs, ½ cup of the Parmesan, and the parsley, yogurt, egg, garlic, and salt. Stir to combine.
  • Line your fryer pan with parchment paper. Form chicken mixture into four half-inch thick patties, and place on the paper. Sprinkle with remaining bread crumbs, and press lightly to set. Spray with cooking spray.
  • Bake patties in the air fryer oven for 12-14 minutes, until fully cooked.
  • Remove the pan from oven and top each patty with 3 Tbs of pizza sauce, 3 Tbs of Mozzarella cheese, and the remaining Parmesan cheese. Return to the oven for 2-3 minutes, until the cheese has melted.
  • Serve with the remaining sauce (warmed in the microwave) on the side.
