Steps:
- Combine pork, almond flour, Parmesan, Cheddar, butter, baking powder, and salt in a large mixing bowl; mix until well combined. Using a cookie scoop and your hands, form into 50 small balls.
- Preheat an air fryer to 370 degrees F (188 degrees C) for a few minutes. Spray the basket with cooking spray.
- Working in batches, place sausage balls in the prepared basket; do not overload as air needs to circulate. Air-fry until browned on the outside and cooked through, about 6 minutes per batch. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Serve immediately, or cover and store in the refrigerator, reheating as necessary.
