African Peanut Butter Sauce image

This sauce recipe comes from some missionaries in Africa. It's usually eaten with rice and I'm sure it would taste nice with some additional vegetables, tofu, or chicken as well.

1/3 cup oil
2 onions, chopped
2 -4 garlic cloves, chopped
5 tomatoes, chopped
3 tablespoons tomato paste
2 1/2 tablespoons peanut butter
1/4 teaspoon pepper
1 -2 vegetable bouillon cube
1/2 teaspoon salt, to taste
1/2 cup water

Steps:

  • In a skillet heat oil, onions, and garlic for about 2-4 minutes.
  • Add the remaining ingredients and cook for about 8-10 more minutes.
  • Serve hot over rice.
