1 Golden Delicious medium apple, peeled, cored, and coarsely chopped
2 ripe bananas, mashed
3 medium carrots, peeled and finely grated
1 1/2 cup sugar
1/2 cup vegetable oil
1/2 teaspoon pure vanilla
2 cups unbleached all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon salt
1/2 cup golden raisins
1/2 cup nuts, chopped finely

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 13X9 inch metal baking pan. In a large mixing bowl, combine the apples, carrots and bananas and sugar; mix well and set aside for 10 minutes. In the same mixing bowl then add the oil and vanilla until all is well combined and the sugar is dissolved. Combine the dry ingredients in a different large mixing bowl by sifting them together. Start with the flour, baking soda, cinnamon, nutmeg, allspice and salt. Stir the dry flour mixture into the apple-banana-carrot mixture, after well combined gently stir in the raisins and nuts. Pour into the baking pan; bake in the preheated oven for 45 to 50 minutes until a toothpick inserted comes out clean. Let the cake cool; cut into squares.
