9 BEAN SOUP image

Black beans
Pinto beans
Navy beans
Lentils
Lima beans
Great Northern Beans
Kidney Beans
2 quarts of Water
1 pound ham (sliced)
1 large onion (chopped)
1 clove Garlic (minced)
Salt (to taste)
16-oz. can tomatoes
small can Green Chilies

Steps:

  • Mix dried beans. Soak 2 cups of bean mix overnight. Drain, add 2 quarts of water and next four ingredients. Cover and bring to a boil, reduce heat, and simmer 1 1/2 hours or until beans are tender. Add remaining ingredients, simmer 20 minutes, stirring occasionally. Serve. Note from Sharon: I couldn't remember all 9 beans, so just pick out 9 dried varieties. Black beans may be hard to find though.
