For the Cake
2 cup all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
4 tablespoon butter
1 cup milk
1 teaspoon vanilla extract
4 eggs, room temperature
2 cup sugar
For the Topping
9 tablespoon butter, melted
3/4 cup packed light brown sugar
6 tablespoon evaporated milk
1 1/2 cup shredded coconut
1/2 teaspoon salt

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 350. Grease two 9-inch circle cake pans. -- Whisk the flour, baking powder, and salt in a large bowl. -- Heat the butter and milk in a medium saucepan over medium heat until the butter melts. Stir in the vanilla. -- With an electric mixer on medium-high speed, beat the eggs and sugar until pale and thick, about 6 minutes. -- Using a rubber spatula, fold in the flour mixture and milk mixture alternately until just incorporated. -- Pour the batter into the prepared pans and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. -- Let cool slightly in the pan, about 10 minutes. -- Heat the broiler.
