12-Minute Chicken & Broccoli image

Number Of Ingredients 13

2 tablespoons olive oil
2 pieces boneless skinless chicken breasts, cut into bite-sized pieces
1 salt & pepper
1 bunch broccoli, chopped into small florets, stem discarded
1/2 cup green onions, thinly sliced
1 teaspoon toasted sesame seeds
3 tablespoons reduced-sodium soy sauce or coconut aminos
2 tablespoons rice wine vinegar
2 tablespoons honey
1 tablespoon cornstarch
1 clove garlic, minced
1/2 teaspoon ground ginger
1 teaspoon sesame oil

Steps:

  • Heat 1 tablespoon olive oil in a large saute pan over medium-high heat. Add chicken breasts, and season with a generous pinch of salt and pepper. Cook for about 5 minutes, stirring occasionally, until the chicken is browned and mostly cooked through.
  • For sauce, whisk together soy sauce, rice wine vinegar, honey, corn starch, garlic, ginger, and sesame oil.
  • Once the chicken is browned, add the remaining 1 tablespoon of olive oil and broccoli, and stir to combine. Continue cooking for an additional 3 minutes, until the broccoli is bright green. Stir in the soy sauce mixture, and cook for an additional 1 minute until the sauce has thickened.
  • Remove from heat and serve immediately, garnished with green onions and toasted sesame seeds.
