$1,000 Cake image

I got this recipe from my mother who was a wonderful cook. She always made it for my brother on his birthday. Because of the unusual ingredient we just called it 'Mayonnaise' cake! Anyway you call it, this is a unique-tasting cake that can become addictive!

Number Of Ingredients 12

1 cup(s) granulated sugar
1 cup(s) mayonnaise
2 cup(s) sifted all-purpose flour
4 tablespoon(s) cocoa powder
1 cup(s) cold water
1 1/2 teaspoon(s) baking soda
1/2 teaspoon(s) table salt
1/2 teaspoon(s) vanilla extract
ICING
1 pound(s) powdered (confectioners) sugar
3 ounce(s) cream cheese, softened
1 tablespoon(s) lemon juice (adjust amount to taste)

Steps:

  • In mixing bowl, cream sugar and mayonnaise together until well blended.
  • Add flour and cocoa powder and mix well.
  • In small bowl, mix water and baking soda together and then add to mixing bowl.
  • Add salt and vanilla, mixing just until blended.
  • Pour into greased and floured 9 x 13-inch or 8-inch square (depending on whether you want a thicker or thinner cake) metal or glass baking pan.
  • Bake at 350 for 35-40 minutes until toothpick inserted into center of cake comes out clean.
  • For icing: Mix all ingredients together until smooth.
  • While cake is still warm, spread icing on to it. Let cake cool completely before serving.
