2 deep dish pre-made pie crust, frozen or refrigerated
1 lb kielbasa, turkey sausage, italian sausage or stick of peperoni
1 c frozen hash browns or other frozen potato
8 eggs, beaten
1/2 c half and half
1 small onion, chopped
1/2 c chopped fresh parsley or cilantro
1 red pepper, seeded and chopped
2 c shredded cheddar cheese or any other variety

Steps:

  • 1. Preheat the oven to 350 degrees.Beat the eggs in a bowl with the half and half. Add the cheese and parsley/cilantro and place in the bottom of each pie plate dividing ingredients evenly. If using refrigerated dough you will have to place the rolled out crust in your own pie plate first.
  • 2. cook the meat in a nonstick pan or spray with Pam, (use a pat of butter if you like!).Add tne frozen hash browns, the peppers and onions but do not brown the onions.
  • 3. Cool the meat and vegatables a bit and add to egg mixture in the pie plates, again dividing evenly and mix slightly to incorporate. Bake at 350 degrees for 35-40 minutes. Check for doneness before removing from the oven by touching the top lightly with you finger which should not be wet or jiggly but somewhat firm.

This recipe won 1st place in the RSC Lucky #13 contest. This quiche is more like a meat and vegetable pie with a cheese/egg custard holding it together. Because the chicken, onions and mushrooms are sauted to the point of carmelization the resulting flavors create a really tasty quiche. I hope you try it and that your family enjoys it as much as we did. This was so good the first time that I didn't make any changes and only needed to make it once, since no adjustments we necessary. My granddaughter who had never eaten any kind of quiche and was reluctant to try it, said after the first few bites, "OOOh, This is really good, I like this!" I hope you like it as well. This can easily be a main dish for dinner or for lunch. It is so full of meat and veggies that it is a meal in itself.

Number Of Ingredients 14

8 tablespoons butter
2 chicken breasts, cut into small pieces
1 large chopped onion
5 baby portabella mushrooms (sliced)
10 fresh baby carrots (julienne'd makes about 1/2 cup)
1/2 cup broccoli, slaw
frozen spinach (5 ounces thawed & squeezed dry makes approx 1/2 cup)
1 (6 ounce) package Laughing Cow cheese
7 egg yolks (beaten)
8 ounces milk
1/2 cup freshly grated parmesan cheese
1 1/2 teaspoons salt (will be added in 1/2 teaspoon increments)
3/4 teaspoon black pepper (will be added in 1/4 teaspoon increments)
1 large unbaked pie shell

Steps:

  • Put the unbaked Pie crust in a 10 inch pie pan. Cover with plastic wrap and put aside.
  • Place 4 Tablespoons of the butter in a hot skillet.
  • Add the chopped chicken pieces and season with ½ teaspoon salt and ¼ teaspoon black pepper.
  • Cook until golden brown. Remove meat from pan and set aside on several layers of paper towels.
  • In the same skillet melt the other 4 Tablespoons of butter. Add the onions, the mushrooms,1/2 teaspoon of salt, and ¼ teaspoon of black pepper.
  • Cook onions and mushrooms until carmelized, by cooking them until they are golden brown. Remove from pan and add to the chicken.
  • Lightly partially cook the julliened carrots and the broccoli slaw in the skillet with any remaining drippings for about 2 minutes. Turn off heat.
  • Add the drained spinach, chicken, onions and mushrooms into the skillet which already has the carrots and broccoli slaw in it.
  • Add the remaining ½ teaspoon salt and the ¼ teaspoon black pepper. Gently toss the ingredients until the spinach is well mixed with the other ingredients.
  • Cream the Laughing Cow Cheese in a medium sized bowl. Add the egg yolks and the milk and mix as much as possible. (If some of the cheese stays in pieces that will be okay since they will end up on the top anyway.
  • Put the meat & vegetable combination into the pie crust lined pan.
  • Gently pour in the milk, egg cheese mixture.
  • Sprinkle the ½ cup of freshly grated parmesean cheese on top.
  • Bake 375 degrees for 40-45 minutes.

This is an adaptation of a recipe that was given to me by a friend a couple of decades ago when I was a newlywed. It is still one of my family's favorites. It is great to pull out of the freezer when I don't have time to cook.

1 1/2 lbs ground beef
2 9-inch deep dish pie crusts, unbaked
1/2 cup sliced fresh mushrooms, any kind
1/2 cup chopped fresh broccoli
1/2 cup chopped canned artichoke heart
1 cup shredded fresh parmesan cheese
1 cup shredded mild cheddar cheese
2 teaspoons onion powder
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 teaspoon seasoning salt
6 eggs
2 cups whipping cream

Steps:

  • Bake pie crusts 5 minutes at 425 degrees F.
  • Brown meat and drain well.
  • Steam broccoli and mushrooms.
  • Mix broccoli, mushrooms, artichokes and meat together and spread in pie shell.
  • Sprinkle Parmesan and Cheddar cheeses over meat and vegetable mixture in shells.
  • Beat eggs, cream and seasonings together and pour over meat pie filling.
  • Bake at 425 degrees F.
  • for 15 minutes then reduce heat to 300 degrees F.
  • and bake 35 minutes more.
  • This makes two quiches so there is an extra one to freeze or share with another real man!

1 stick butter
4 oz mushrooms, fresh, sliced
1 medium onion, diced
3 oz italian sausage, no casings, crumbled
1 sheet pillsbury refrigerated pie crust dough (pillsbury works great)
4 slice bacon
3 c italian blend or cheddar cheese, shredded
4 x large eggs
1 c heavy cream, cold
salt & pepper, to taste
garlic powder. to taste

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. In a large skillet, add sausage & bacon, cook, until no longer pink; 5 - 8 minutes.
  • 3. Add butter, onions & mushrooms, season with salt, pepper & garlic powder; cook until onions are translucent; 10 minutes. Set aside & cool slightly, 10 minutes.
  • 4. Fit dough into 9" pie plate; flute edge.
  • 5. Sprinkle enough cheese in bottom of crust, about ½ - 1 C.
  • 6. Beat eggs with cream, salt, pepper & garlic powder. Pour into crust; sprinkle with about ½ - 1 C cheese.
  • 7. Bake 50 minutes or until set & golden. Immediately out of oven, sprinkle with remaining cheese. Let stand 20 minutes before serving.
