1/2 cup raw almond butter or 1/2 cup smooth cashew butter
1/4 cup pure maple syrup, agave nectar or 1/4 cup raw honey
1/2 teaspoon vanilla extract
1 dash salt
1/2 cup ground almonds

Steps:

  • For the ground almonds take 1/3 cup raw almonds and process in a food processor fitted with the S blade until finely ground.
  • Place the almond butter, maple syrup, vanilla, and salt in a food processor fitted with the S blade and process until smooth.
  • Transfer to a small bowl and freeze for 30 minutes.
  • Form into 1-inch balls and flatten slightly. Roll each cookie in the ground almonds.
  • Freeze for at least 2 hours before serving. Stored in a sealed container in the freezer, these cookies will keep for up to one month.

We are always looking for recipes to try and become a little bit healthier, and these fit right in. They are simple, delicious and very easy to make. Hope you will enjoy them as much as we do.

1 c medjool dates, pitted
1/4 c ground golden flax seed (organic)
1/2 c raw almonds
1/2 c raw walnuts
1/2 c peanut butter, can be smooth or chuncky
1 tsp pure vanilla extract
1/2 tsp sea salt

Steps:

  • 1. Place almonds and walnuts in the food processor or blender and process them until they become a fine powder. If you want the cookies to be a little bit crunchy, don't process nuts long.
  • 2. Add the peanut butter, vanilla, dates and salt into the food processor and process the ingredients until the mixture starts to form a dough.
  • 3. Form the dough into balls and place on a sheet of parchment paper. Press each ball with a fork to make the classic peanut butter cookie pattern.
  • 4. You can eat them right away and or wrap them up and let them chill in your fridge. Enjoy !
